The selection of olives one can buy today is extraordinary. In a good food market one can find thirty varietals or more to buy. Olives are as loved and sought after today as they have been through the centuries. They are nutritionally sound and bring strong flavor and texture to our table and whatever we are cooking. So, when you cannot find that flavored olive you yearn for, make your own. Here is a simple recipe that I am sure will gratify you and your guests.
Ingredients
- 1 pound -brine--cured black olives with pits
- 3 garlic cloves, peeled and crushed
- 1 large orange, zest removed with a peeler and julienned, orange juiced
- ½ teaspoon ground fennel
- Pinch crushed -red--pepper flakes
- 2 tablespoons -extra--virgin olive oil
Directions
In a large bowl, toss together the olives, orange zest and juice, garlic, fennel, -red–pepper flakes, and olive oil. Pack the mixture into a glass jar, and let the olives marinate for 3 to 4 days in the refrigerator. Remove the garlic, and serve. Olives will keep for several weeks in the refrigerator.
