Everybody is familiar with string beans dressed with butter, but the addition of one herb, mint, -re–creates the dish so it has a new and fresh taste. Use this simple addition for zucchini, peas, cauliflower, and others of your favorite vegetables.
Ingredients
- 1 pound string beans, trimmed
- 3 tablespoons unsalted butter
- 1 loosely packed cup fresh mint leaves, chopped
- ¼ teaspoon kosher salt
Directions
Bring a large pot of water to a boil. Add the beans, and blanch until tender, about 8 to 10 minutes. Remove to an ice bath or bowl of cold water.
Meanwhile, in a large skillet, melt the butter over medium heat. Add the mint and salt. Add the blanched beans, toss, and cook for a minute, to coat the beans with the butter and blend the flavors.
