Barley

Barley is a wonderfully versatile cereal grain with a rich nutlike flavor and an appealing chewy, pasta-like consistency. Its appearance resembles wheat berries, although it is slightly lighter in color. You can generally find barley in its pearled, hulled and flaked form. It is available prepackaged as well as in bulk containers. When buying in bulk, make sure the bins containing the barley are covered with no evidence of moisture to ensure its maximal freshness. Store the barley in a tight covered container in a cool dry place. Barley is an excellent addition to soups and stews. It also is delicious when used as a risotto.
