On occasion, I cook pasta that I want to dress so simply that I not even take down a skillet. I drain the pasta quickly, turn it into a big warm bowl, and immediately drizzle extra-virgin olive oil over it, and toss well. And then I toss again with a cup of freshly grated Grana Padano. That’s it.
