What is pecorino?

You will find that many of my recipes call for this sheep’s milk cheese from central and southern Italy. 

Pecorino is very brittle and has a sharper flavor than other grating cheeses. You can use it in place of or in combination with Grana Padano, but it is also delicious paired with good olives, sausages, or red wine.
