Provolone originated in Campania and is a semihard cheese made from full-fat cow’s milk. It is a pulled cheese, like mozzarella, that is formed in a pear shape, has a smooth skin, and is usually coated with some wax and hung to age. The taste of provolone may vary greatly. The provolone piccante-piquant, has a sharp taste; provolone dolce is sweet with a very mild taste; and there are other varieties, including a smoked provolone.
