Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 cups quick-cooking oatmeal (not instant)
  • 1 1/2 teaspoons baking soda
  • 1 teaspoons salt
  • 1 cup (2 sticks) unsalted butter, melted and cooled slightly
  • 1 1/2 cups packed light brown sugar
  • 1 cup sugar
  • 3 large eggs, lightly beaten
  • 1 1/2 teaspoons vanilla
  • 1 (12-ounce) package semi-sweet chocolate chips

Directions

 

Preheat oven to 350 degrees and arrange a rack in the top and bottom thirds of the oven. Line 2 large baking sheets with parchment. Whisk together flour, oatmeal, baking soda, and salt in a bowl. In a large bowl, beat butter and sugars with an electric mixer at high speed until pale and fluffy, 2 to 3 minutes. Slowly add eggs, beating until creamy, about 1 minute. Beat in vanilla. Reduce speed to low and mix in flour mixture until just blended and then stir in chips with a wooden spoon. Cover dough and refrigerate for 30 minutes to an hour to firm up. Scoop dough in 2 tablespoon portions and roll into balls. Arrange them 2 to 3 inches apart on baking sheets as the cookies will spread quite a bit. Bake 2 pan of cookies at a time, until golden, about 14 to 15 minutes, rotating the pans from top to bottom rack halfway through baking. Cool on wire racks.
