Cheese should be served at room temperature but stored in a cool place.
Most cheese should be stored in the refrigerator, wrapped well to keep moisture in and odors out. However, do not leave cheese in the same wrappings for extended periods of time; change them every four to five days. Keep cheeses at the bottom of of the vegetable and fruit bin, so their aromas do not permeate other foods and they do not pick up flavors. Firm cheeses can be kept for several weeks. Fresh cheeses have a much shorter life span and should be used within a week. You can freeze some cheeses to keep them longer but I don’t recommend it, freezing will ruin the wonderful texture making it mealy. For optimal flavor, bring cheese to room temperature before serving.
