The apple is one of the most widely cultivated fruits.
The United States is now the second largest producer of apples, but Italy does its share of growing and using apples, especially in the Val di Non in the Trentino-Alto Adige region. Besides eating apples as a fruit and using them in desserts, I find apples delicious in salads, paired with roasted or cooked vegetables, and baked or sauteed with meats, especially pork, game and fowl. Applesauce is a great fat substitute for low-fat baking. Simply substitute half as much applesauce as the fat that is called for.
