Storing Cheese

Most cheese should be stored in the refrigerator, wrapped well to keep moisture in and odors out. Firm cheeses can be kept for several weeks. Fresh cheeses have a much shorter life span and should be used within a week. You can freeze some cheeses to keep them longer but I don't recommend it, freezing will ruin the wonderful texture making it mealy. For optimal flavor bring cheese to room temperature before serving
