Sicily's Almond Milk

Some of the best almonds grow in Sicily, a region known for its extensive repertoire of almond dishes. Blooming almond trees are a beautiful site, like white clouds dotting the landscape. One of the most traditional and well-know Sicilian desserts is Pasta Reale, the almond paste that so many Sicilian desserts are made with, such as little white lamb-shaped treats around Easter time, Cassata and the beautiful macaroon fruit. Almond trees were brought to Sicily from Asia by the Greeks in the 5th century BC and grew throughout the island in profusion. Crushing fresh almonds in water is a tradition in Sicily; they allow the mixture to steep for a day or two, strain it, and then drink the liquid, almond milk. One could compare it to coconut milk. Almond milk is a refreshing drink, and is delicious poured over ice on a hot summer day. In the warmer months, ice cream and sorbet are made using this natural almond water. In Italy, the almond drink known as Orzata is available for sale at bars and stores all over the country.
