Buying artichokes

Artichokes come in up to seven or more sizes, so make sure you buy the best size for the recipe. When buying artichokes they should be firm almost squeaky when pressed, and should be vibrant green in color. Brownish streaks in the leaves indicate age. Look for and always ask for ones with the stems attached. The stems act as a reserve food supply for the vegetable and will keep it fresh longer. Artichokes turn brown quickly when you are cleaning them, so be sure to have some water acidulated with lemon juice handy to soak them in once they are trimmed.
