I have an abundance of Basil and would like to freeze it. Last time I froze it I found it to be black when I was ready to use it. Can you help me?

My friend gave me a great idea/tip - instead of making pesto to freeze she just purees some cleaned & dried basil in the food processor with a pinch of salt, then adds enough extra virgin olive oil to make a paste. Then she places the mixture in ice cube trays to freeze. Once they're frozen, she places the cubes into ziploc bags and take them out as needed. That way you can add some basil to dishes as needed or make pesto fresh. It defrosts really quickly & is so easy. It's not the same as the leaves but works nonetheless. Give it a try.
