Sweet ricotta is one of my favorite desserts – slightly sweet and fresh, but rich in flavor.
Think of this simple, yet wonderful dessert the next time you find fresh, large-curd ricotta cheese. Spoon the cheese into a fine sieve or a colander lined with a basket-type-coffee- filter. Set the sieve over a bowl and let the ricotta drain in the refrigerator overnight. Spoon the drained cheese into a loaf pan lined with plastic wrap. Chill it until firm, then invert it onto a serving platter. Cut the loaf into ¾-inch slices, and drizzle them with honey and some of your favorite chopped and toasted nuts.
