I usually grill fish or shellfish which is always quick and always a family favorite.
Be sure that your grill is clean by scraping the rack well. Just marinate your seafood in garlic and oil and toss in some fresh herbs. Let your fish marinate for about an hour before putting it on the grill. When you are ready to start cooking, make sure you grease the hot grill rack lightly before putting on the food with an oiled paper towel. Sear the fish without turning until deeply marked by the grill, anywhere from 2 to 5 minutes. This will minimize sticking. Keep garlic oil handy and drizzle or brush on seafood sparingly while grilling-usually on turning the pieces. Try to avoid spilling any oil onto the lava rocks or coals as it will cause flare ups.
